Ingredients

Rub

2 parts black pepper
1 part Kosher salt
Touch of chili powder (prefer Chipotle Chili Powder)
Touch of Granulated garlic powder
Touch of Granulated onion powder
Touch of paprika.

Spray

Apple Cider Vinegar

Preparation

Preheat Smoker to 275F

Apply some olive oil to the ribs so the rub will stick

Liberally coat the ribs with the rub mixture

Put the ribs into the smoker.

Check for color at 2 hours.  You want golden mahogany.

Preheat your BBQ sauce a bit.  I like to use my Honey Chipotle BBQ Sauce on ribs.

Spray on some apple cider vinegar.  Then add sauce from a squirt bottle.  Just do this to the meat side and leave the flip side alone.

Close up the smoker and let it smoke for another 15 minutes.

If the color is right, its time to wrap it in foil.

Lay out the foil and spritz with Apple Cider Vinegar.  Then, apply sauce from squirt bottle.  Put ribs on the foil meat side down.  Spritz and sauce the other side and wrap it up in foil.

Back in the smoker for another 2 hours.

Pull ’em out and check for doneness with a toothpick.  Assuming they’re ready, let them rest in the foil for 30 minutes.
