We love our tomato salads, and also our peaches. So why not put both together?
4 yellow peaches
2 cups varied sliced tomatoes (different sizes and colors)
1/4 small red onion, very thinly sliced
1/4 cup fresh basil leaves
1/2 cup (2 ounce) crumbled feta cheese
1/2 cup chopped pecans (they can be candied or spiced if desired)
2 Tbsp olive oil
1 Tbsp apple cider vinegar (sherry vinegar is also good)
1 tsp Honey
1/8 tsp cayenne pepper
Salt and Pepper
Place sliced tomatoes and peaches in a large bowl.
In a small bowl, whisk together the oil, vinegar, cayenne pepper, salt and pepper.
Toss tomatoes, onions, and peaches with dressing.
Garnish with pecans, basil and feta crumbles and serve.
