My wife and daughter turn to these super easy chocolate mint ganache brownies every time they need a quick but tasty dessert that won’t take much effort.

Making them is simplicity:

  1. Bake a batch of brownies.  A mix out of a box will be fine.
  2. As soon as it comes out of the oven, lay on the Andres mints.
  3. Wait a little while for the mints to melt, then spread them out with a knife to form a thin icing.
  4. Decorate with sprinkles, nuts or whatever as desired.  You could even guild the lily as many seem to with more crushed Andes mints.

That’s it.  Full stop. You are done and they are so good!

Honestly, these things are so darned good we just keep a box of Andes mints and brownie mix around so we can make them any time.

I took these pictures as we were making them for our Christmas Eve Reception.  They’re a perfect soothing and cooling complement to my red hot Chili Fudge.
