Ingredients

1 lb Carrots
1/4 cup mayo
1/2 tsp Kosher salt
3 Tbsp Honey
1/2 cup canned crushed pineapple, drained
1/3 cup golden raisins
2 teaspoons curry powder
1 teaspoon minced garlic
2 Tbsp lemon juice
1/4 cup sour cream

Preparation

Wash carrots and peel.  Use a vegetable peeler to shred them into carrot slaw.  Lazy Man’s Tip:  Our grocery store will sell you pre-grated carrots!

In a large mixing bowl whisk together the non-carrot ingredients.  When well combined, add the carrots and toss to combine.
