Every good meal deserves an appropriately flavored starch. In this case, we went with traditional Spanish Rice. This is a great recipe we arrived at after sampling several others and tweaking it in.
1½ cups converted long-grain rice
1 (15-ounce) can of diced tomatoes, such as Hunt’s
1 (4-ounce) can of diced green chiles, such as Ortega
2 tablespoons of Chipotle Taco Seasoning from the packet, such as Ortega
3 1/3 cups of water
Preparation is simplicity in itself:
– Combine all the ingredients in a saucepan and bring to boil.
– Reduce heat to medium-low and simmer covered for 20 minutes or until the rice is cooked and the water absorbed.
– Remove from the heat and let stand covered for 5 minutes. Fluff with a fork.
